Food Poisoning
In today’s fast paced culture, more and more Americans dine out and forgo the rigors of cooking and cleaning at home. As recently as March of 2007, it was reported that Oklahoma City has the dubious distinction of being the fast food capital of America, making the top ten list 4 of the last 10 years. Oklahoma fast food restaurants are notorious for unsanitary food preparation and storage practices. Unfortunately what this means is that Oklahomans are more likely to contract a food borne illness than citizens of any other state.
The Centers for Disease Control and Prevention has characterized food poisoning as the fastest growing epidemic in the United States with tens of millions of cases being reported annually. Ever year, over 250,000 cases of food borne illnesses require hospitalization and can lead to other more severe illnesses such a Guillain-Barre Syndrome (GBS) and even death. The most common causes of food borne illnesses are bacterial infections resulting from exposure to either Campylobacter-jejuni or E-coli.
Campylobacter is the main culprit causing food borne illnesses, and is most prevalent in undercooked poultry, but can also be the result of drinking unpasteurized milk and contaminated water. Symptoms usually occur between 2 to 5 days after exposure. Symptoms can however manifest much earlier depending upon the level of exposure, the amount of food already in the system capable of diluting the bacteria, and the presence of other bacteria including E-coli.
